Budget Bites Shepherd’s Pie

Ingredients for 8 Servings

  • 2 tbsp
    Olive oil
  • 1 cup
    White onion, chopped
  • 1 cup
    Carrots, chopped
  • 1 cup
    Mushrooms
  • 2 cloves
    Garlic, minced
  • 1 lb
    Ground beef
  • 1/2 tsp
    Salt
  • 1/2 tsp
    Pepper
  • 1 Tbs
    Worcestershire sauce
  • 2 Tbs
    All-purpose flour
  • 2 Tbs
    Tomato paste
  • 1 cup
    Beef broth
  • 1 cup
    Frozen peas
  • 1 1/2-2 lbs
    Red potatoes, cut into 2-inch chunks
  • 4 Tbs
    Butter
  • 1/3 cup
    Whole milk
  • 1 ts
    Salt
  • 1/2 ts
    Pepper

Method

  1. Spray a 9”x13” casserole pan with non-stick cooking spray.
  2. Add the oil to a large skillet and place it over medium-high heat. Add the onions, carrots, mushrooms, and garlic and cook 5 minutes, stirring occasionally. Pour into the prepared casserole dish.
  3. Add the ground beef to the skillet and brown for 6-8 minutes, stirring occasionally.
  4. Add the Worcestershire sauce and tomato paste. Stir to combine and cook for 1 minute.
  5. Add the flour and stir until well incorporated for two minutes.
  6. Add the broth and frozen peas. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
  7. Pour the meat mixture into the casserole dish with the vegetables and stir to combine. Preheat oven to 400 degrees F.
  8. Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil and cook until potatoes are fork tender, 25-30 minutes.
  9. Drain the potatoes in a colander. Place potatoes back into the hot pot and add butter, milk, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
  10. Spread the mashed potatoes on top of the meat/vegetable mixture in the pan until fully covered. Place in the hot oven and bake for 35-40 minutes or until sides begin to bubble.
